Potato Salad recipe needed, please!?

A restaurant chain that began in Mississippi offers a side dish of potato salad that I absolutely love. The restaurant is Sweet Peppers. Anyway, I'd love to make a batch of salad at least similar to theirs. I know it includes red new potatoes, mayo, and maybe a bit of some kind of white cheese. Does anyone have a clue of a recipe similar to this????Potato Salad recipe needed, please!?

Red, White and Blue Potato Salad Recipe


A festive looking salad.





Ingredients


- 3 bunches green onions, divided


- 1 cup non-fat plain yogurt


- 1/2 cup light mayonnaise


- 1/4 cup champagne vinegar or white wine


- 1 tablespoon Dijon mustard


- 2 teaspoons sugar


- 1 teaspoon salt


- 3/4 teaspoon coarse ground black pepper


- 1 1/4 pounds blue potatoes, unpeeled


- 1 1/4 pounds small new red potatoes, unpeeled


- 1 1/4 pounds small white potatoes, unpeeled


- 1 cup feta cheese, crumbled





Directions


# Make dressing ahead of time and allow to chill. Whisk together onions, yogurt, mayonnaise, vinegar, mustard, sugar, salt and pepper. Cover and refrigerate.


# Place potatoes into a large kettle. Fill kettle with water to cover potatoes.


# Add 1 teaspoon salt to kettle and bring to a boil.


# Cook potatoes until just tender, approximately 15 minutes. Drain.


# Peel off skins of blue potatoes only.


# Allow potatoes to cool.


# Cut potatoes into bite size pieces.


# Place all red potatoes at one end of the salad, white potatoes in the center and blue potatoes on the opposite end of serving dish.


# Toss dressing over potatoes carefully.


# Garnish with feta cheese.


# Cover and chill 2 to 3 hours before serving.
No, but when you make your potato salad make sure those potatos are boiled perfect, not too hard and not so soft they are mash. Add Tangy mayo, mix in gently and finish off with ground black pepper just for looks. The flavor is in the mayo you choose.
no. for something a little different try marzetti's slaw dressing instead of mayo. you can also make potato salad with left over mashed potatoes.
ITALIAN POTATO SALAD





Dressing:





1 1/2 cups olive oil


3/4 cup wine vinegar


1 teaspoon sea salt


1/4 teaspoon cracked black pepper


1/4 teaspoon each basil and oregano (or to taste)


pinch of red pepper flakes








Salad:





2-3 lbs baby new potatoes


2 large red sweet vinegar peppers


1 large red onion, sliced into rings





Combine ingredients for salad dressing. Slice vinegar peppers into strips. Slice onions into thin rings.


Scrub potatoes and remove eyes. Do not peel.





Steam or boil gently in their jackets until nearly tender. Remove from heat and drain. Cover and let sit 10 minutes to finish cooking.





Cut potatoes into bite sized pieces and set aside in a serving bowl.





In the same pan, bring remaining ingredients to a boil, then remove from heat. Allow to cool several minutes and add cooked potatoes (they should still be hot).





Allow potatoes to marinate for 10 minutes, then remove with a slotted spoon.





Season to taste with salt and pepper.





Save remaining dressing to use as a marinade for chicken or beef.





For a different taste, add 1/4 teaspoon rubbed sage and chopped rosemary or summer savory.





Up to 1/4 cup of the wine vinegar can be substituted with either balsamic or tarragon vinegar.





Serve warm or cold.
