I'm looking for a cheesy potato casserole recipe?

this is not the recipe using hash browns or shredded potatoes. This version is popular in the midwest and uses cubed/diced potatoes.I'm looking for a cheesy potato casserole recipe?
Could be many things, but how about a Cheesy Scalloped Potatoes which uses diced potatoes.





Ingredients:





* 3 tablespoons butter


* 1 tablespoon minced onion


* 3 tablespoons flour


* 1 teaspoon salt


* 1/4 teaspoon pepper


* 1/2 teaspoon dry mustard


* 1 1/2 cups milk


* 8 ounces grated American or mild Cheddar cheese


* 4 cups cooked diced potatoes


* 1/4 cup soft bread crumbs


* 1 tablespoon melted butter





Preparation:


Melt 3 tablespoons butter in saucepan. Add onion and cook until tender. Remove from heat. Mix together the flour, salt, pepper, and dry mustard. Add flour mixture to the butter and onion, stirring until smooth. Gradually add milk, stirring constantly. Cook over low heat, stirring constantly, until thickened. Add cheese, saving about 1/2 cup for the topping. Continue cooking slowly, stirring constantly, until cheese is melted. Remove from heat. Put potatoes in a lightly greased baking dish. Pour sauce over potatoes. Sprinkle bread crumbs combined with 1 tablespoon of melted butter over the top. Top with the reserved cheese.





Bake at 350掳 for 20 minutes, or until lightly browned.I'm looking for a cheesy potato casserole recipe?

SERVES 4 -6





8-10 medium potatoes, cut into bite sized chunks


1 (10 3/4 ounce) can cream of chicken soup


1 (8 ounce) carton sour cream


1 cup shredded cheddar cheese





Peel and cut potaoes into bite sized chunks. Place in pan with water and boil until fork tender. Drain.


Spray a 8x11 baking dish with non stick cooking spray.


Add drained potatoes, Cream of Chicken Soup and Sour Cream. Mix well in baking dish. Stir in 1/2 cup shredded cheese. Top with remaining cheese.


Bake at 350 degrees for 25 - 30 minutes.


Note: I sometimes add cooked, crumbled bacon and or scallions to this dish.
