Sweet Potato Pie Recipe ,`)
1 (1 pound) sweet potato
1/2 cup butter, softened
1 cup white sugar
1/2 cup milk
2 eggs
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 (9 inch) unbaked pie crust

Boil sweet potato whole in skin for 40 to 50 minutes, or until done. Run cold water over the sweet potato, and remove the skin.
Break apart sweet potato in a bowl. Add butter, and mix well with mixer. Stir in sugar, milk, eggs, nutmeg, cinnamon and vanilla. Beat on medium speed until mixture is smooth. Pour filling into an unbaked pie crust.
Bake at 350 degrees F (175 degrees C) for 55 to 60 minutes, or until knife inserted in center comes out clean. Pie will puff up like a souffle, and then will sink down as it cools.Does anybody have a delicious potato pie recipe??
Get a big baking dish, like a lasagna dish or something similar. The deeper the better
Peel and slice into thin disks as many potatoes that will fill the dish basically.
If you like bacon, use about a cup and a half cooked diced bacon
layer potatoes, sprinkle bacon, s%26amp;P fresh chopped parsley or herb of choice, a handful of chopped onion and repeat, then pour cream %26amp; milk mixed and top with bacon %26amp; grated cheese, a sprinkling of smoked paprika or just normal, bake till knife goes in easily serve with fresh parsley on top.

Same prep for potatoes, but instead of bacon, substitute good canned salmon, don't laugh, it is delicious, use fresh dill instead of parsley and do cream %26amp; milk thing.
Use a medium heat so top doesn't brown too much before under is cooked through. You will need 1 large bottle (in Australia 600mls) at least per dish, I find I thin it out with milk rather than go nuts and use all cream. Dot top with real butter before baking.
Extremely yummy and other than the peeling etc, quite hassle free.
Very good for 'second helpings' and next day, It goes very quickly at my house.
Boil and mash 1lb. potatoes, Cook a little onion and garlic in oil(don't brown). Add this and 3 oz cheese to this and mix well.Season .
Put in fireproof dish. Sprinkle top with 2/3 oz. cheese and a little grated nutmeg.
Cook in oven until cheese is brown. Voila.
