I need a recipe for a delicious low fat potato salad.?

Low Fat Red Potato Salad





2 lb red potatoes, boiled in their jackets,


then cut in cubes


1 red onion, sliced


1 or 2 stalks celery, sliced crosswise


1 dill pickle, sliced


1/2 cup Best Foods (Hellman's) low fat mayo


1 tablespoon mustard


enough dill pickle juice to stretch the mayo (or you can use lemon juice or red wine vinegar.)


chopped fresh Italian parsley


If you like sugar, add it to your taste.





Mix all the ingredients together and let sit for 1/2 hour before serving to allow the flavors to blend.I need a recipe for a delicious low fat potato salad.?
y can't have a low fat potato salad because potato is not low fat, if y want to loose weight choose different salads for example mozzarella, tomato, salad, maize,olive green %26amp; black, tuna with a little bit of oil, salt, and balsam winegar that's great!!! use the ingredients you would normally use: cooked potatoes, boiled eggs, onions, celery, salt sensse(1/3 less than regular salt), pepper, and here's the low fat part: low fat or fat free mayo. Hope you like it!

because potato and low fat are not good match ...
Use low fat mayo, add mustard, dill weed and or dill pickles, red skin potatoes (with the skins on) and a little sweet onoin, salt and pepper.
A nice change from potato salad drenched in mayo...but you either LOVE this recipe or you don't...no middle ground.

Yield: About 6 cups, serving 4 to 6





INGREDIENTS


2 pounds fingerling potatoes or other small waxy potatoes


1/2 cup or so extra-virgin olive oil


1/2 cup 1/4-inch slices of scallion, green and white parts


1/2 cup chopped onion


3 cloves garlic, mashed and coarsely chopped (1 1/2 tsp)


1/3 cup white wine


1 1/2 tablespoons Dijon-style mustard


2 to 3 tablespoons chopped chives


2 tablespoons or more coarsely chopped fresh green or purple basil, fresh tarragon, or parsley


1/2-1 teaspoon kosher salt, plus more if needed


1/2 teaspoon freshly cracked black pepper (coarse), plus more if needed





For serving and garnishing: Large radicchio leaves, about 6, from the outside of the head


1 or 2 hard-boiled eggs, coarsely chopped


Chopped fresh parsley





DIRECTIONS:


Scrub the potatoes and put them, whole, in a saucepan with water to cover by 1/2 inch. Bring the water to a boil, reduce the heat, and cook the potatoes gently until they are just tender and can be pierced with a sharp knife. Drain immediately and let cool slightly. (Scrape the skin from the cooked potatoes, if you want, as soon as they can be handled. For a decorative look with fingerlings, scrape off only a band of skin, about 1/2 inch thick, all around the long sides of the potato.)





2. Heat 2 tablespoons of the olive oil in a small saute pan. When hot, add the scallions and the onion, toss to coat well, and cook for about a minute over medium-high heat. Add the garlic, toss to mix, and cook for just a few moments, then remove the pan from the heat.





3. Slice the potatoes while still warm, cutting them crosswise into 1/2-inch sections. Put the pieces in a large mixing bowl, pour the wine and 3 or 4 tablespoons of olive oil over them, and toss gently to distribute. Add the warm vegetables from the pan, mustard, chives, chopped herbs, salt, and pepper, and gently fold all together, mixing well but not crushing the potatoes. Taste the salad and add more seasonings as you like.





4. Serve the potatoes warm (no colder than room temperature). Arrange the large radicchio leaves, if you have them, in a close circle on the serving platter, with their curved insides up, to form a rough bowl. Spoon the potato salad inside the leaves, sprinkle chopped egg around the edges, and parsley over the top.

    Pinch of salt

    1 pound sweet potatoes, roasted peeled and mashed


    2 cups sweetened whipped cream


    Dash of bourbon


    1 cup chocolate sauce





    Directions





    Preheat the oven to 350 degrees F.





    Combine the crumbs, ground pecans and the butter together. Mix well and press into a 10-inch spring-form pan. In a food processor, with the metal blade, mix the cream cheese until smooth. Add the cane syrup and blend. Add the eggs one at a time to thoroughly incorporate into the cheese mixture. Add the heavy cream. Add the flour, salt, cinnamon and vanilla and blend until smooth. Add the mashed sweet potatoes and blend until smooth. Pour into the prepared pan. Bake for 1 hour and 15 minutes or until the cake is set.





    Remove from the oven and with a knife loosen the sides from the pan. This will prevent the cake from spiting down the center. Completely cool the cake before cutting.





    Combine the whipped cream and bourbon together, blend well, keeping it whipped. Garnish each piece of cake with the Bourbon Whipped Cream and a drizzle of chocolate sauce.Does anyone know the recipe for Sweet Potato Cheesecake?

    2 cups finely crushed graham cracker crumbs

    Preheat an oven to 400 degrees F (200 degrees C).

    Prick sweet potato several times with a fork and place onto a baking sheet.

    INGREDIENTS


    1 pound ground beef


    1 (15 ounce) can green beans, drained


    1 (11 ounce) can whole kernel corn, drained


    2 (10.75 ounce) cans condensed cream of mushroom soup, undiluted


    1 (8 ounce) package shredded mozzarella cheese


    1 cup crushed potato chips





    DIRECTIONS


    Preheat the oven to 350 degrees F (175 degrees C).





    Crumble the ground beef into a large skillet over medium-high heat. Cook and stir until evenly browned. Drain off the grease. Stir in the green beans and corn, and cook for a few minutes.     1 envelope dried onion dip mix

    Coat chicken breasts with the chips and then bake for an easy BBQ chicken. Or you can add them to meatloaf.

    scrub a large idaho baking potatoe, rub it with olive oil, and sprinkle it with course salt. pierce it, bake it at 400 degrees for 1 hour. when done split it open and put cheddar cheese on it, some finely chopped green onions, and some crumbled bacon, the real kind or even the microwave kind, but not bits, i forgot put real butter on it first, and then sour cream

    3 pounds (9) medium-size potatoes


    3 egg yolks, beaten


    3 tablespoons cornstarch

    Roll each dumpling lightly in flour. Cook in rapidly boiling corned beef salted water 15 to 20 minutes. Remove cooked dumplings from water; serve hot. Makes 12 or more dumplings.

    10 slices bread


    1 teaspoon salt


    1/4 teaspoon pepper


    1 onion, grated


    1 teaspoon minced parsley


    2 eggs, well beaten

    Wash, peel and grate potatoes. Soak bread in a little cold water; squeeze out as much water as possible. Mix bread, salt, pepper, onions and parsley. Add potatoes and eggs; mix well.





    Form into balls; roll lightly in flour; drop into corned beef salted boiling water (1 teaspoon salt to each quart water). Cover pot tightly; boil 15 minutes. Serve with sauerkraut, beef, or chicken. Serves 4 or more.

    Rub meat side with salt, turn and pour sauce on fat side.

    1/2 c ketchup


    1/4 c vinegar


    1/2 c chopped onion


    1 T worcestershire sauce


    1 1/2 T liquid smoke


    1 T black pepper





    Cover completely in foil and place in baking dish or shallow pan (broiler pan) and refrigerate overnight. Bake at 300 to 325 degrees for 30-45 minutes. Then reduce to 225 degrees for approximately 6-8 hours.

    Melt the butter in a large saucepan and throw in the potatoes and onions.


    Saute for 5 minutes

    Liquidize (a stick blender is best - less washing up!)

    Plus, the magic ';sauce'; is what we on Earth call gravy. And we mash potatos to maked ';mashed'; potatos.
    take standard instant potatoes and follow the directions --- it is how it is done at KFC --- I used to work their about 15 years ago. That is how they make theirs. As for the sause, out of the can brown gravy is nearly the same.
    You could probably come close to it by buying a jar of gravy, at the supermarket; they're pretty bad, you should love it.

    I slice up my potatoes and onions...dice up ham (I like adding ham to it). I butter the bottom of the casserole dish, then start layering potatoes, onion, ham...then add american cheese broken up into strips, sprinkle cheddar or cheddar-jack and then parmesean cheese, dot with butter and salt %26amp; pepper and continue the layering process with these ingredients.     Scallop Potatoes W/ Ham and Green Chiles





    4 lg Potatoes; sliced thin


    1 lg Onion; diced


    2 tb Butter or margarine


    Ham to taste; diced


    4 oz Velveeta cheese


    2 tb Cornstarch


    Green chile; chopped





    Instructions:


    Place potatoes, onions and butter in enough water to cover top of


    ingredients.





    Cook until potatoes are ALMOST done.





    Remove potatoes to a baking dish.





    Add cheese to remaining liquid; let simmer till cheese is melted.

    Put them in a big mixing bowl salt and pepper them. Slice half of a white onion put in with the potatoes Sprinkle a little flour over the top and then just stir them up with your hands .. Just enough flour to coat the outside.


    Grease with butter a glass casserole dish layer the potatoes in the pan with a layer of cheddar, American, and smoked provolone (or whatever cheese you like) add 3/4 cup of milk over the top. then make sure the last layer is cheese with 3 pats of butter on the top . Bake at 350 until you fork the potatoes and they are tender.

    Here's a quick and easy recipe for scallop potatoes:





    SCALLOPED POTATOES (serves 7)





    INGREDIENTS:





    3 pounds potatoes, thinly sliced


    salt to taste


    9 tablespoons all-purpose flour


    6 tablespoons butter, diced


    1 quart milk





    DIRECTIONS:





    Preheat oven to 425 degrees F (220 degrees C). Grease a 9x13 inch baking dish.





    Arrange one layer of potatoes in the bottom of the prepared baking dish. Sprinkle the potatoes with salt, 3 tablespoons flour and 2 tablespoons butter. Repeat layering 2 more times, until all of potatoes have been used. Slowly pour milk over the potatoes until the dish is 3/4 full of milk.





    Bake until the milk comes to a boil (check after 5 minutes), then reduce heat to 375 degrees F (190 degrees C) for another 45 to 60 minutes.
    There's nothing critical about it. I like to use a ceramic pot with a lid.


    Slice potatoes between 1/4'; %26amp; 1/8' in thickness, build layers in pot.


    Alternate with sliced onion, %26amp;/or mushrooms, if desired.


    You can save the grated cheese for the top, or sprinkle between layers.


    I usually poor condensed mushroom soup, diluted with milk, over it all.


    But you can use any combination of milk, cream, %26amp; butter; to cover.


    Bake in oven around 400F, along with your roast, for example.






    I make mine on the stove. Thinly slice the potatoes, and leave the skin on. Put some whole milk, salt and pepper in a big saute pan with the potatoes. Use enough milk to cover the pan about 1/4 inch. Then put the heat on to medium high and cook, stirring constantly. If you overdo the milk, turn the heat down, cover the pan, and let them cook that way. When the potatoes are tender and the milk has been absorbed, add your shredded cheese. That's it. I don't measure so I can't be more precise than that, and it usually takes about 10 minutes to make this dish if you don't slice the potatoes too thick.
    Peel your potatoes and slice. You can use regular raw potatoes or canned potatoes.


    Pour enough milk in the bottom of the casserole dish to just barely cover the bottom.


    Layer potatoes, Velveeta cheese, diced or sliced onion, salt and pepper.


    Repeat to fill up the bowl.


    **Bake until potatoes are done. If you are using raw potatoes they take about an hour on 350 degrees.


    **Canned potatoes will not take as long to cook since they are already cooked. It just needs to be warmed up, probably around 35-40 minutes in the oven.


    **If your top layer is cheese, keep a lid on the bowl to keep the cheese from getting to dark. Take the lid off for the last few minutes to brown.


    **Any type of cheese can be used. I like the way Velveeta melts, so I always use it. Sometimes, I mix in some cheddar or colby-jack with the Velveeta. Use whatever is your favorite or what you have on hand.

    Fry half of your potatoes in Olive Oil and season them to match your main dish. Like if you were doing lamb, add some rosemary etc. Skies the limit there. Add them and the oil when you mash (You'll need to reduce butter obviously).





    This adds a great layer of flavor and texture to the dish.

    Mashed Potato Tips:


    1. Start with russets, Idaho etc.. Just a plain basic potato, no need for red potatoes, or Yukon golds etc鈥?Just stay with the classics here.


    2. Don't over boil the potatos the way to tell when they are done is just when a fork can be poked all the way thru a potato with out any force.


    3. Drain well or you will have a thin watery mashed potato.


    4. When you emtpy your potatos back into the bowl to mash, weather you hand mash or use a mixer just mash the potatos and seasonings without the butter and milk first. Then when you get the consistentcy you want add some milk and butter and stir/fold it in. Potatos can sometimes get a glue like consistentcy due to the starch, mixing them ';dry'; frist helps to prevent that.





    Seasoning ideas.





    I like to use white pepper in my potatos, but don't use as much it's very strong.





    I also like garlic powder/salt, onion powder/salt, and celery salt.





    If they taste a little bland add a dash or two more salt, the salt helps to bring out the buttery, creamy-ness of the potatos.





    Cream is good in mashed, and I also like to use evaporated milk, it has a nice consistncy with out being to overboard and is realtvly cheap.





    You can also add cream cheese, ricota cheese, sour cream, and I haven't trie d fets yet but now I want to. Buttermilk is good too.

    A good recipe for left over mashed taters.





    1/2 cup flour


    1/4 tsp salt


    1 egg lightly beaten


    1 tsp baking powder


    1 cup mashed potatoes-warmed just a bit


    1 tsp dried parsely





    Mix everything together and form into little round balls, then fry in hot oil, drian and enjoy.





    Or you can make these into potato pancakes and just mash the balls flat.

    If you really want to use red taters for mashed here is a recipe we used to use at my Mother in laws restaurant. I haven鈥檛 had them in ages and they sure do sound good right now, just something different.





    2 lbs red potatoes-quartered


    1 陆 tbsp mashed potatoes


    3 tbsp butter


    1 cup sour cream





    Boil taters with skin on until tender. Drain and mash with the remaining ingredients.





    You do want to make sure you at these up right away though. They just don鈥檛 do as good as left overs and definiltly get gluey very easily.
    This is my family's favorite mashed potato recipe!





    Garlic Smashed Red Potatoes





    3lb. small red potatoes


    4 cloves of garlic minced


    1t. salt


    1t. pepper


    2t. italian seasonings


    1t. chives


    1/2 cup water


    2T. olive oil


    Chive and Onion Cream Cheese Spread


    1/4 cup butter


    1/2 cup milk, if desired





    1. Cut potatoes into halves or quarters as necessary to make similar size pieces; place in a 4 to 6 quart slow cooker. Stir in garlic, salt, pepper, Italian seasonings, chives, water, and oil until potato pieces are coated.


    2. Cover; cook on high for 3-4 hours or until potatoes are tender.


    3. With fork or potato masher, mash potatoes and garlic. Stir in cream cheese spread until well blended. Stir in butter and enough milk until creamy. Serve immediately, or cover and hold in slow cooker on low setting up to 2 hours.
    I usually make ';supreme'; mashed potatoes with:


    * melted butter (lots of melted butter)


    * whole milk or sour cream


    * minced garlic


    * cheddar cheese


    * chives or chopped green onions


    * salt, pepper, and dried parsley to taste





    Here is the weird ingredient I sometimes use: chopped green olives. Sounds weird but it is really good (if you like olives of course). Note: I use the fresh green pitted olives from my grocery store deli, not the ones in the jar with the pimento but those would probably work too.





    I also sometimes chop cooked broccoli or spinach and mix that in too. Probably any vegetable would work.
    I loooooove garlic, so when making mashed potatoes I like to crank the oven up to 400F, and throw in a couple of garlic bulbs (with the tops cut off). Pour a little olive oil over them, and some freshly cracked salt and pepper to taste. Roast them in the oven for about 45 minutes.





    Steaming keeps in a lot more flavor than boiling, so for really creamy, tasty spuds be sure to steam them! Once they're done, add a little butter, cream and the roasted garlic cloves (I've been known to put two whole garlic bulbs in my potatoes). For the yummiest, creamiest potatoes, I highly recommend using a blender (the slender blenders work best and are easiest to clean - http://www.blackanddecker.ae/en/homeprod鈥?/a>





    Add more salt and pepper to taste, and make sure you don't kiss anyone for a while after eating them! :)
    My favorite alterations are:


    - Add chicken bouillon to the water when boiling (or use chicken broth)


    - Add milk and sour cream while blending to make it more creamy


    - Add a pinch of sugar (it adds a special flavor)


    - Add a pinch of garlic powder


    - Add diced green onions


    - Make breakfast potato pancakes with leftover mashed potatoes: mix one egg and about 1/3 cup mashed potatoes: pan fry (add ketchup if you like it).

    Make your mashed potatoes just like you normally would, then add a dash of nutmeg and an egg. Whip the egg into the potatoes well. The heat from the potatoes cooks the egg, and the mashed potatoes have a depth of body you would not believe, nice color and a wonderful sheen.
    Steam frozen fresh or tinned green peas over the top and if you can't get them minted, add some mint leaves to the peas.





    Drain the spuds and mash, then fold in the peas. The flavour of the mint will permeate the potatoes giving them a wonderful taste.





    You could use diced carrot of corn kernels.





    Using pasrnips or sweet potatoes will give a wonderful sweetness to them.
    I like to shred extra sharp cheddar and mix it in with it . Then press it into a baking bowl like a pie shell . Then throw in leftover chicken and vegetables or whatever meat I want to use up out of refrigerator .Then add a can of cream soup with it . ( chicken , celery , mushroom )


    here is a nice side as well . Dice up some onion and green bell pepper add some sliced black olives flour and dry mustard mix them with the potatoes and form into patties . Now you can fry them or bake them . These are great with any chops or even chicken . To jazz them up spoon some salsa on top and a dab of sour cream or just put out the ketchup bottle most kids think it is a food group anyway .
    Cream cheese, sour cream and minced green onion.





    You can also use all of the above, add two eggs and bake the mixture in the oven to brown the top, it makes a nice side dish.
    I like my mashed potatoes simple: salt, pepper, nutmeg, heavy cream, and plenty of butter.





    You could try mixing in Ranch dressing for extra flavor.
    After cooking your potatoes %26amp; are in the mashing stage, I use warm milk, salt, pepper, and crushed garlic. Absolutely our of this world!


    Oh~I also leave the skins on potatoes~~all the vitamins are in those skins.

    ******CROCK POT CHEESE HASH BROWN POTATOES


    1 (2 lb.) frozen hash browns


    1/2 c. butter


    1 tsp. salt


    1/2 c. onion, chopped


    1 pt. sour cream


    2 c. Cheddar cheese, shredded


    1 can Cream of Chicken soup


    Mix all ingredients together and cook in crock pot 4 hours on high or 6 to 8 hours on low.
    Cheesy Potato Casserole Recipe


    Ingredients:


    1/2 cup milk


    1/2 cup chicken broth


    1 8 oz. sour cream


    1 tablespoon margarine


    1 bag of frozen hash browns or cut your own





    Directions:





    In large mixing bowl, combine all ingredients. See Melty cheese recipe and pour melty cheese over ingredients. Stir well.





    Grease 9x13 casserole dish and pour in contents from mixing bowl. Take a seal able sandwich or larger bag and put 2 cups (approx.) of corn flakes in and seal removing most of air. I place it on the floor and smashed it to crumbs turning bag over so as not to make corn flake dust.





    You can take a rolling pin or hard plastic glass and do the same. Spread corn flakes over entire casserole dish, cover with aluminum foil, Bake at 350 degrees for 90 minutes, remove foil and bake 7-10 more minutes. Do not overcook with foil removed





    Serves: 8





    Preparation time: 1 hr 45 min.

    2 cans corn


    1 can cream style corn


    2 large potatoes, chopped in 1/2 inch cubes and parboiled or


    2 cans cubed new patatoes


    1 can cream of mushroom soup mixed with can milk


    1 cup finely grated cheddar cheese


    1/4 cup finely grated Parmesan cheese


    2 cups French fried onions


    salt and pepper to taste





    Mix the 3 cans corn with the soup, milk and potatoes until all is coated with mixture. Add 1 cup French fried onions and most of the cheeses. Set aside a bit for garnish on the top of casserole. Add salt and pepper to taste.


    Bake at 325掳F in 9x13x2 glass or metal pan for 20 minutes. Sprinkle remaining French fried onions and cheeses on top and bake another 10 minutes.

    1 bag of tater tots


    1 can of cream of chicken soup


    2 sm. containers of sour cream


    8 oz. of shredded Cheddar cheese





    Let tater tots thaw and crumple into a large bowl. Mix in soup and sour cream and 1/2 the Cheddar cheese. Spread into a baking dish and sprinkle the remaining cheese on top.


    Bake covered at 350 degrees for 45 minutes. Serve and enjoy.

    1 sm. onion, chopped

    2 c. corn flakes, crushed

    Grease a 9 x 13 inch baking pan. Empty hash browns into pan. Add one stick of melted butter pour over top of hash browns. Sprinkle chopped onion over top. Mix soup and one cup of milk, pour over top. Sprinkle shredded cheese over top.


    Mix crushed corn flakes with one stick melted butter, then sprinkle over top. Bake on 350 degree oven for one hour. Serve hot.











    CHEDDAR POTATO CASSEROLE





    1- 10 3/4 oz can cream of mushroom soup


    1/2 teaspoon paprika


    1/2 teaspoon pepper


    4 large russet potatoes


    1 cup shredded cheddar cheese





    In a small bowl mix soup, paprika, pepper.


    Spray a 2qt baking dish with nonstick cooking spray, and arrange potatoes in overlapping rows. Sprinkle with cheese. Spoon soup mixture over cheese.





    Cover with foil and bake at 400F for 45 minutes, uncover and continue to bake for 10 minutes, or until potatoes are fork tender.

    1 green onion, minced


    1 clove garlic, minced


    2 hard boiled eggs, chopped

    1 tablespoon cider vinegar


    1/4 teaspoon celery seed


    1 teaspoon brown mustard


    salt and pepper, to taste





    In a skillet, saut茅 bacon, green pepper and garlic just until edges of bacon become crispy. Drain on paper towels. Reserve a few tablespoons of the drippings from the bacon.


    Place potatoes in cold water in a medium saucepan. Add 1 teaspoon salt and a small amount of the reserved bacon drippings. Boil until fork tender, about 15 minutes. Drain and cool. Cut into 1 inch cubes.





    In a small bowl, combine mayonnaise, mustard, cider vinegar, celery seed, salt, and pepper.

    For the problem of mushy potatoes, boil them with their skins on. This will keep them intact. Start with cold, well salted water. If you pick potatoes that are all about the same size they will cook up evenly. If you peel and cube the potatoes while they're hot and drizzle them with vinegar they will absorb the flavor.     Peel, cube and roast on a cookie sheet at 350 for 50 minutes 4 sweet potatos tossed first with chopped a large vidalia onion, salt and pepper and a tablespoon of olive oil. Scrub, cube and roast on a seperate cookie sheet for 1 hour or until tender a variety of potatos (4-5) tossed first with 1 tablespoon olive oil, salt and pepper. Remove from oven, let cool to room temperature. Toss together with 1/2 cup chopped fresh parsley and 1 cup of Hellman's mayo. Adjust salt and pepper. Flavor seems better at room temp. but if not serving immediately add mayo just before serving.

    5 large patrone potatoes


    4 cups canola or peanut oil

    Peel %26amp; cut potatoes into 3mm discs


    Heat oil in saucepan to 120掳C


    Add the potatoes %26amp; continuously stir the oil, don鈥檛 let them crisp, let them steam so they will puff up


    As soon as they show signs of puffing, remove from oil


    Heat oil to 180掳C cook potatoes until golden











    Pommes mousseline





    3 large Sebago potatoes


    250g butter, chopped


    2 tbs warm milk


    2 tbs salt





    Cook the potatoes in boiling, salted chicken stock until cooked


    Mash with 90g of butter


    In saucepan, whisk in 1 tbs of the milk for 3-4 mins over low heat


    Add remaining butter, bit at a time, whisking rapidly


    If it starts to split, remove from heat %26amp; add 1 tbs of milk, whisk like mad to bring it together

    55g/2oz unsalted butter


    1 Desir茅e potato, peeled and grated

    1. Gently melt the butter in a small, non-stick frying pan.


    2. Scatter the grated potato in the pan, spreading it out evenly, and season well.


    3. Gently fry for 3-4 minutes each side until crisp, golden and cooked through.


    4. Sprinkle with the parmesan cheese, remove from the heat and serve.
    Cut them into wedges (peeled or unpeeled). Place 1/2 cup of flour in a plastic bag, along with a shake of salt, pepper, and whatever spices you like (paprika is good, and lemon pepper is better). Put the wedged in the bag, shake to coat with the seasoning, and then place in a single layer on an oven tray. Drizzle with olive oil if you have it, or cooking oil it you don't, and roast at 180 degrees celcius until done (between 30 mins and an hour depending on the size of wedges).
    I really wish I knew what your standard potatoes are because my standard potatoes come in about 5 different types............but I love a good hearty Roasted Potato myself. Toss them around in some Olive oil, butter, your favorite seasonings and put them in a hot oven (425) and let them roast away! The crisper, the better for me! I like garlic, salt, pepper, onion powder, rosemary, shredded shallots, crushed red pepper.............so enjoy this mix and happy cooking to you with your potatoes!

    In a small bowl, combine the chili powder, cumin and flour. Sprinkle over the meat and stir until evenly coated. Crumble the oregano over the meat and pour in 1 1/2 cans of the broth.


    Add the salt and ground black pepper, stir together well, bring to a boil, reduce heat to low and let simmer, partially covered for about 90 minutes.     1 can green beans.


    1 can peas


    2 carrots peeled and chopped


    1 can corn


    NOTE: remaining cans not drained


    1 can italian tomatoes


    1/2 a can of rotel tomatoes


    1 can tomato sauce


    1/4 bag veggy noodles


    1 can chic broth


    2TBLS minced garlic


    1 chopped onion


    1to 1 1/2 TBLS Italian seasoning


    2 ts garlic salt


    2 ts onion powder


    1 chicken and tomato bouillon cube


    All you do is pour all into a large pot or crock pot and cook.


    This has a great kick to it. You won't be disappointed.

    1 small onion, diced


    1 large jar diced pimentos, drained


    3 tablespoons butter

    OK. Here's a great recipe that will taste like delicatessen potato salad from the '60s, classic and good! I know. I spent two summers doing nothing but making it in 50 lb batches by hand! I'll scale it down for a family's use.





    Ingredients:





    3 lb Russet potatoes OR 3 lb Baby Yukon Gold potatoes. If you use Russet potatoes, boil them in salted water until a paring knife inserts easily, with skins on. Drain, cool briefly, peel, then refrigerate until completely cooled. When cooled, cut into 1/2'; cubes. If using Baby Yukon Gold, quarter each potato and boil in salted water until a paring knife inserts easily. Drain and cool on a sheet pan.





    2 stalks of celery, finely diced.


    1 Spanish onion, finely diced.


    5 radishes, finely diced


    3 hard boiled eggs, finely diced.





    Put the potatoes and other ingredients in a large mixing bowl.





    For the sauce:


    1 1/2 cup Miracle Whip (NOT mayonnaise)


    1/2 cup yellow mustard


    1 Tbsp table salt


    1 Tbsp black pepper





    Mix the sauce in a separate container and pour over the potatoes and veggies. Mix until blended and all pieces are coated. Refrigerate for at least two hours (to allow the flavors to blend). Then, when ready to serve, taste and adjust salt and pepper if necessary. ENJOY!!!

    Hot German Potato Salad








    8 ounces thick sliced bacon, cut into pieces


    Canola o锟? Yukon gold potatoes, medium size, cut into large dice





    Salt and freshly ground black pepper


    1/2 red onion, diced


    2 tablespoons capers, drained


    3 tablespoons red wine vinegar


    1 tablespoon Dijon mustard


    3 tablespoons extra-virgin olive oil


    Put diced potatoes into a pot and fill with cold water (water should just cover the potatoes). Put pot on stove on medium flame and add salt. When water comes to a boil, and the potatoes are cooked, drain the potatoes and spread锟?out on a side towel to dry.


    While potatoes are doing their thing, add bacon to a large saute pan and cook over a low/medium flame. When the bacon is cooked remove with a slotted spoon and drain the bacon fat, reserving some if you want to add it later. Wipe out the pan with a wad of paper towels (and crank up the heat), add a decent amount of a neutral oil, like canola, and heat it until you get some smoke.


    Once the oil is hot, carefully add the potatoes and shake the pan a couple of times to make sure nothing sticks. Lower the heat a little and let the potatoes brown. Season with salt and pepper.


    After a few minutes, shake the pan and get the other sides going. When the potatoes are almost completely cooked, add the red onion and let everything cook together. Once the onions are caramelized, add the capers, red wine vinegar and deglaze. When the vinegar is mostly evaporated, add the extra-virgin olive oil, mustard and bacon (and reserved bacon fat if you want), re-season with lots of cracked black pepper. Serve warm.

    4. 1/3 cup blanched almonds


    5. 1 clove garlic


    6. 1 teaspoon paprika


    7. Pinch cayenne


    8. 1 1/2 teaspoons red- or white-wine vinegar


    9. 2 tablespoons olive oil


    10. 1 teaspoon salt


    11. 1/4 teaspoon fresh-ground black pepper


    12. 1 4-ounce can boneless, skinless sardines, drained


    13. 1/3 cup chopped fresh parsley





    Directions





    1. Put the potatoes in a medium pot of salted water. Bring to a boil. Boil until the potato slices are barely tender, about 5 minutes. Drain the potatoes thoroughly.


    2. Meanwhile, heat the broiler. Stand the whole bell pepper upright and cut the flesh from each of the sides, leaving the stem, seeds, and core behind. Put the pepper and the plum-tomato halves on an aluminum-foil-lined baking sheet, cut-side down. Broil until charred, about 5 minutes. Peel off and discard the blackened skin.


    3. Put the roasted pepper and tomatoes in a food processor or blender. Add the almonds, garlic, paprika, cayenne, vinegar, oil, 3/4 teaspoon of the salt, and the black pepper. Puree until almost smooth.


    4. In a large glass or stainless-steel bowl, toss the sardines with the potatoes, the bell-pepper strips, and the remaining 1/4 teaspoon salt. Toss the salad with 1 cup of the romesco sauce and sprinkle the parsley over the top. Pass the remaining romesco sauce at the table.






    I like to use new red-skinned potatoes with the peel still on.


    Boil up 2 1/2 lbs to make 6 dinner servings or 12 pot luck style.


    Drain %26amp; cool, then cut into 1/2'; cubes.


    Combine 1 cup of mayo, 2/3 cup chopped dill pickle, 3 tbsp dill juice,


    3 chopped green onions, 1 tbsp mustard, 1/2 tsp each salt %26amp; pepper.


    Gently toss together until coated. Garnish with 2 tsp chopped fresh dill.

    In a large bowl, whisk together the processed cheese, sour cream, mushroom soup, celery soup, water, 1/2 of the margarine and salt and pepper to taste.


    Place potatoes in prepared dish, add soup mixture and mix well.


    Mix crumbs with remaining melted margarine and sprinkle over top of potato casserole.


    Bake for 40 minutes or until crumbs are lightly browned and casserole is bubbling.

    ';Also called ';Ward Party Potatoes,'; ';Christmas Potatoes,'; ';Potato Casserole'; I'm sure many other names - but the most famous is Funeral Potatoes because it is often served at funerals and Church parties in Utah. ';





    Ingredients:








    6 cups diced potatoes*





    1 can (10 戮 oz.) cond. cream chicken soup





    1/2 soup can milk





    1 cup sour cream





    1 cup sharp cheddar cheese, grated





    1/4 cup grated onion (optional) **





    salt and pepper to taste





    3 tablespoons butter, melted





    3/4 cup corn flake crumbs





    Method:


    Cook fresh potatoes or thaw frozen potatoes (see *note below). Place potatoes in a 2-3 quart casserole dish or a 9x13 cake pan.





    Combine soup, milk, sour cream, cheese, and onion (see **note below) and salt and pepper to taste. If a saucier dish is desired, add 2-3 tablespoons additional milk. Mix well. Spread sauce over potatoes.





    Melt butter and combine with corn flake crumbs. Sprinkle crumbs over casserole. Bake uncovered at 350 F for 30-45 minutes or until hot and bubbly throughout.





    Notes:





    * Use approximately 6-8 peeled, diced, and cooked fresh potatoes; or approximately 2 pounds frozen, southern style, diced hash browns (not shredded). ** Use 1 tablespoon dried onion or saut茅 1/4 cup fresh chopped onion in 1 tablespoon butter until transparent.





    There are probably as many variations in how to make this dish, as there are names for it. Whatever you call it (or how you make it) it is tasty dish, which is often served with ham and green beans. Recipe serves approximately 8.
    FUNERAL POTATOES





    1 1/2 lb. hash brown frozen potatoes (Southern style are best)


    1 can cream celery soup


    1 can cream potato soup


    3/4 c. milk


    1 pt. sour cream


    Grated onion





    Mix all together and put in shallow baking dish. Generously spread with Parmesan cheese and bits of butter.


    Bake 350 degrees for 45 to 60 minutes

    HERB-ROASTED NEW POTATOES


    Yield: 6 Servings





    1 lb 14 oz small red potatoes,


    .unpeeled (or russets)


    1/4 c Chopped fresh basil or 1 tsp


    .dried basil


    1 tb Chopped fresh oregano or 1


    .tsp dried


    1 tb Olive oil


    1/2 ts Salt


    1/4 ts Black pepper


    2 1/4 oz Grated parmesan cheese





    1. Preheat oven to 425F. Cut the potatoes into 6-8 wedges each.





    2. In a large bowl, combine the basil, oregano,oil,salt and pepper.


    Add the potatoes and toss to combine.





    3. Place the potatoes on a nonstick baking sheet and sprinkle with


    parmesan cheese.





    4. Bake for 20-25 minutes of until tender and golden brown.

    1 tablespoon Dijon mustard


    1/4 teaspoon dried dill


    1/2 teaspoon salt


    1/2 teaspoon ground black pepper





    In a large saucepan, add potatoes to enough water to cover. Bring to a boil, and boil for 8 minutes. Add green beans, return to a boil and cook for 2 minutes. Drain and cool slightly.


    Place potatoes and green beans in a serving bowl.





    In a small bowl, whisk together olive oil and next 5 ingredients. Pour over potato and green beans, tossing gently to coat. Cover and chill.

    Roasted Potato and Green Bean Salad





    - 2 pounds small red potatoes, washed and cut into 3/4 inch cubes


    - 1/4 cup plus 3 tablespoons extra virgin olive oil


    - 3/4 pound green beans, ends trimmed, cut to 1 1/2 inches


    - 1/3 cup fresh mint, chopped (I omit the mint)


    - 1 1/2 tablespoons fresh lemon juice


    - 1/4 pound feta cheese, crumbled


    - salt and fresh ground pepper to taste





    Preheat oven to 450 F.





    Place potatoes on a baking sheet:; drizzle with 1 tablespoon of olive oil and sprinkle with salt and pepper. Bake for 20-30 minutes, stirring occasionally, or until tender.


    Place potatoes in a large serving bowl. Over high heat and while potatoes are roasting, bring a pot of salted water to a boil. Add green beans and cook until crisp-tender, approximately 7 minutes. Drain. Add green beans to potatoes in bowl and add mint. Toss.





    In a small bowl, whisk the olive oil and lemon juice. Add to the potato mixture and toss. Season with salt and pepper. Crumble the feta on top and serve with mint sprig for garnish, if desired

    2 pounds red potatoes, quartered


    1/4 cup butter, melted


    2 teaspoons minced garlic


    1 teaspoon salt


    1 lemon, juiced


    1 tablespoon grated Parmesan cheese

    Preheat oven to 350 degrees F (175 degrees C).





    Place potatoes in an 8x8 inch baking dish.





    In a small bowl combine melted butter, garlic, salt and lemon juice; pour over potatoes and stir to coat. Sprinkle Parmesan cheese over potatoes.





    Bake, covered, in preheated oven for 30 minutes. Uncover and bake an additional 10 minutes, or until golden brown.

    Potato Cooking Basics


    Oven Baked Potatoes





    Preheat oven to 350 degrees. Scrub potatoes and pierce to allow steam to escape. Bake on oven rack or cookie sheet for 60-75 minutes. (To test for doneness, squeeze with an oven mitt. Potatoes should give easily.)





    Favorite toppings are sour cream or butter. Healthy alternatives include salsa, broccoli and low fat cheese, or chili.





    Variation: Half Baked potatoes





    Cut potatoes in half lengthwise. Sprinkle parmesan cheese on the cut surface and place cut side down on greased or sprayed baking sheet. Bake at 350 degrees for 30 minutes.





    Mashed Potatoes





    Scrub one 5-1/3 oz. potato for each person. Bring a medium pot of salted water to a boil. Add the potatoes and cook until tender, about 20 minutes. (Test for doneness by piercing with a fork). Drain water and return pot to warm stovetop for a few seconds, shaking pot to remove remaining moisture.





    We recommend not peeling potatoes, but if you wish you can easily slip of the skins at this point with a knife. Place potatoes in a large bowl and mash. Popular additions are butter, milk and pepper. Alternative seasonings include minced garlic, sour cream, or buttermilk.





    Microwave Mashed Potatoes (a video demonstration of this quick technique can be viewed at potatounderground.com)





    Scrub four potatoes, 5-1/3 oz. potatoes, place into a microwave safe dish and cover with lid or plastic wrap. Do not peel or poke potatoes, and be sure to vent the container. Some microwave containers have venting lids on the cover, or you can cover with plastic wrap and leave slightly open on one side.





    Microwave for 8 minutes or until potatoes are done. Use oven mitts to remove dish from microwave, as steam will have built up. Also use mitt to remove top from cooking container. Mash right in the container, adding milk, butter, salt and pepper as desired.





    Oven Roasted potatoes





    Allow one 5-1/3 oz. potato per person. Heat oven to 450 degrees. Scrub potatoes and cut into wedges wider than traditional fries (or one inch cubes if you prefer). Coat a baking sheet with cooking spray. Place potatos on cooking sheet and drizzle with one to two tablespoons of olive oil and toss to coat. Sprinkle with salt and pepper. Roast for 30 minutes. Turn and roast for an additional 15 鈥?30 minutes, until potatoes are crunchy on the outside.





    Alternative seasonings include chili powder or parmesan cheese
    I cut them into large bite size pieces, put them in a glass pyrex dish with a cover. Melt butter and drizzle, sprinkle with salt and pepper. Add chopped rosemary (or if you just have dried rosemary use that). Bake at 400 until done. It's yummy!
    I love roasting them in the oven with butter salt, pepper and a bit of rosemary or dill..
    Wash 'em, boil 'em, smash 'em and add a honkin knob of butter and some cream. Serve with bangers and peas. Yum!

    2 medium sweet potatoes (about 1-1/4 pounds)


    1/2 stick (1/4 c.) unsalted butter


    3/4 c. sugar


    3/4 c. whole milk*


    3 large eggs


    1 tsp. vanilla


    1/2 tsp. cinnamon


    1/4 tsp. freshly grated nutmeg


    1/4 tsp. salt


    1 tbsp. dark rum


    1 tbsp. all-purpose flour


    1 unbaked 9-inch pie shell





    * For a richer flavor, use 1/2 c. plus 2 tbsp. of evaporated milk instead of whole milk





    Preheat the oven to 350 F. Prick the sweet potatoes with a fork and roast them on a shallow baking pan in the middle of the oven until very tender, about 1-1/4 hours. Cool to room temperature. Raise the oven temperature to 400 F, and place a shallow baking pan on the bottom rack. Scoop the flesh from potatoes into a bowl and discard the skins. Mash the sweet potatoes with a fork until smooth. Melt the butter in a small saucepan and stir in the sugar.     Sweet Potato Pie Recipe





    1 pound 3 ounces sweet potatoes, peeled and cubed


    1 1/4 cups plain yogurt


    3/4 cup packed, dark brown sugar


    1/2 teaspoon of cinnamon


    1/4 teaspoon of nutmeg


    5 egg yolks


    Salt


    1 (9-inch) deep dish, frozen pie shell


    1 cup chopped pecans, toasted


    1 tablespoon maple syrup


    Special equipment: steamer basket








    Put cubed potatoes into steamer basket and place steamer basket into a large pot of simmering water that is no closer than 2 inches from the bottom of basket. Allow to steam for 20 minutes or until the potatoes are fork tender. Mash with potato masher and set aside.


    Preheat the oven to 350 degrees F.





    Place sweet potatoes in the bowl of a stand mixer and beat with the paddle attachment. Add yogurt, brown sugar, cinnamon, nutmeg, yolks, and salt, to taste, and beat until well combined. Pour this batter into the pie shell and place onto a sheet pan. Sprinkle pecans on top and drizzle with maple syrup.

    Sweet Potato Pie Recipe





    Pastry Pie Dough for 1 (9-inch) pie pan or 1 (10-inch) tart shell, recipe follows


    2 cups cooked sweet potatoes, peeled, boiled and drained and mashed


    4 eggs


    1 cup light brown sugar


    1 orange, juiced


    1 cup heavy cream


    1/2 stick unsalted butter, melted


    1/2 teaspoon cinnamon


    1/2 teaspoon allspice


    1/4 teaspoon fresh grated nutmeg





    Blind bake tart shell for 10 minutes in a preheated 350 degree oven. In a mixing bowl, combine ingredients thoroughly. Pour sweet potato mixture into tart shell and return to 350 degree oven and bake for 25 minutes or until center is set.





    Pastry Dough Recipe:


    4 1/2 cups flour


    12 ounces cold diced butter


    2 teaspoons salt


    3/4 to 1 cup ice water





    In a food processor, combine the flour, butter and salt and pulse until the mixture is very coarse. Pour the flour/butter into a large bowl and add the ice water. Pour out onto a clean, flat surface into a large log. Using the palm of your hand, gently push and pull the mixture to form it into a dough. Do not knead, you are just slightly manipulating it.

    Sliced Sweet Potato Pie Recipe





    Crust:


    2 cups all-purpose flour


    1 teaspoon salt


    2/3 cup hydrogenated shortening


    6 tablespoons cold milk


    Filling:


    3 to 4 sweet potatoes


    1 cup brown sugar


    1 cup sugar


    1 teaspoon ground nutmeg


    1 teaspoon ground cinnamon


    Pinch mace


    2 tablespoons butter


    1 cup scalded milk


    1 teaspoon vanilla extract





    Streusel topping:


    1 cup all-purpose flour


    1/4 cup brown sugar


    1/2 cup pecans, chopped


    1/2 cup chilled butter (1 stick)


    1/8 teaspoon salt


    1/4 teaspoon ground cinnamon











    Preheat oven to 325 degrees F.


    For the crust: Combine flour and salt. Cut in shortening. Gradually add milk just until mixture will hold together. Roll and fit into 9-inch pie pan. Crimp edges.





    For the filling: Boil sweet potatoes until tender. Peel and cut into 1/4-inch thick slices. Combine the sugars and spices. Layer sliced potatoes with sugar mixture in crust. Dot each layer with butter. Pour cool scalded milk over filling.





    For the streusel topping: Combine all ingredients except butter. Cut butter into mixture and stir or rub until crumbly. Sprinkle on top of the filling and bake for 1 hour. Best served warm.
