i,ve never made them because when i was a child we would eat corned beef with mash and baked beans, and mix it all together. but i think you use a King Edward potato, as their good for mashing, and buy shortcrust pastry. boil the potatoes, drain then add butter and milk, fold in the corned beef, then pile onto the circles of pastry, remember to brush beaten egg on the edges to help them stick. i would put in an oven at 200/gas 5? for about 15-20 mins. good luck.xxxxxxxxxxxxx
County Cork Cornish Pasties recipe

2 large baking potatoes

1 tablespoon bacon grease

1 to 1 1/2 cups water

1 (12 ounce) tin corned beef (not hash)

Salt and plenty of pepper

Pie crust pastry

1 egg

1/3 cup milk

Peel potatoes and slice into 1/4-inch slices.

In a saucepan heat the bacon grease. Add the sliced potatoes and cover with water. Bring to a boil. Reduce the heat, cover, and simmer until the potatoes are fork tender, about 15 minutes.

Drain any remaining water, and add the corned beef. Stir well. Slightly mash some of the potatoes as you stir. Add the salt and pepper. Let the mixture cool to room temperature.

Roll the pie crust into individual 8- to 9-inch circles. Place 1 cup of the meat and potato mixture on half of each circle, fold over, and press the edges to seal. Beat together the egg and milk and brush over the pasties. Place on a baking sheet. Bake at 350 degrees F for about 45 to 50 minutes or until light brown.

Can't make Corned beef pasties without onions (Sob Sob...) if it isn't a crime, it should be. Mrs. Parmo King makes corned beef and potato pasties with onion and they're legendary (Called Cow Pasties as per desparate dan's Cow Pie - she makes them as well) Take hot mashed potato (Maris Piper are best, not too watery), chopped corned beef and put the onions in raw, mix it up. Roll out your pastry and make pastie shapes, fill them not too full with the mixture, (otherwise they'll burst) , brush with milk, bake in a hot over for 30 minutes, gorgeous!
