About Hanukkah
In Hebrew, Hanukkah means ';dedication.'; According to www.jewfaq.com, the holiday stems back to when the Jews, led by the Maccabees, defeated the Greeks and reclaimed their holy temple in Jerusalem. While rededicating the temple, the Jews needed oil to light the menorah, but had only enough to burn for one day. Miraculously, the menorah burned for eight days. Thus, Hanukkah is an 8-day celebration, and it commences this year on the evening of Dec. 25.
Note from kate: These are delicious and if you've never had them you will be surprised. Topped with warm chunky applesauce or sour cream.
Ingredients
6 large white baking potatoes
2 large eggs, beaten
2 tablespoons flour
1 teaspoon salt
Pepper, to taste
1 1/2 medium onions, grated
1/4 teaspoon baking powder
Corn or peanut oil, for saut茅ing
Directions
Step: 1
Preheat oven to 175 degrees F. Have all ingredients ready, including grated onion, before grating potatoes. Grate potatoes and drain. Add remaining ingredients. Mix well. Heat oil in skillet and drop by tablespoonful. Fry until brown on both sides. Turn on each side only one time to prevent latkes from becoming soggy. Drain on paper towels after they are saut茅ed, place them on a baking sheet and into the oven to keep warm. Makes approximately 16 latkes.

Either way- they are delicious!! Flour gives it a smooter texture than matzah meal- so you choose-and top w cinnamon apples or syrup- or sweet powdered sugar- Yummy! Happy Hanukkah!!Deb
