Does anyone have a recipe for mayo-less mustard-less amish cole slaw and potato salad?

I had this at a place in Ohio last month and I'm craving it. The slaw seemed to have only sugar, cabbage, carrots, celery seed and maybe milk. The potato salad had been put through a ricer. It had no mayo and no mustard. It tasted strongly of sweet gherkin pickles but then it was outrageously sweet and I have no what they used to make it that way.

Amish Cole Slaw





3 pounds cabbage; shredded


2 white onion; thinly sliced


4 carrots; shredded


1 cup oil


2 cups sugar


1 cup vinegar


2 teaspoons celery seed


1 teaspoon salt





Put shredded cabbage in large bowl. Layer onions and carrots on top. Boil oil, sugar, vinegar, celery seed and salt for 1 minute. Pour over cabbage mixture. Let stand at least 2 hours - (Best if let sit overnight) then mix well. Put in airtight container. Will last 3 weeks in refrigerator.Does anyone have a recipe for mayo-less mustard-less amish cole slaw and potato salad?
I believe this is what you may be looking for. I had to dig through OLD...OLD... recipe books of my mother's to find this one. She was 81 when she died 2 yrs. ago and I think she has EVERY cookbook ever written since day one. LOL


It's from Old Good Housekeeping cokbook and a Penna Dutch cookbook has it too.


Dutch Hot slaw:


6 cups cabbage (shredded fine)


1 Tbl. butter


2 eggs (beaten)


1/4 cup vinegar


1/2 tsp. ssalt


1 and 1/2 Tbl. sugar


1/2 tsp. dry mustard


1/8 tsp. paprika(Use Hungarian paprika...in a red can)_


1/4 cup water


1/4 cup light cream (half and half will do)


Cook cabbage in 1 '; boiling water which has been salted. (1/2 tsp salt to EACH 1'; of water used)


Cook covered till tender crisp, about 5-8 minutes


DRAIN


Keep hot. Meanwhile melt butter in dbl boiler or very LOW heat and add next 7 ingredients. Cook till thickened. Stirring constantly. Remove from heat and add cream. Beat till smooth. Pour over cabbage. 4-5 servings


I imagine you could use the same dressing over the potatoe salad. Sugar can be adjusted to taste if ya want it sweeter.
