This is my favorite potato salad recipe:





3 pounds red or gold potatoes - scrubbed clean and cut into slightly larger than bite size pieces


4-8 oz shredded sharp cheddar or smoked cheddar cheese


about 1 cup diced green onions


4-5 garlic cloves


1/2 teaspoon dried thyme


1/2 teaspoon dried oregano


1/2 cup real mayonnaise


1/2 cup sour cream


1 teaspoon lemon juice


salt and pepper to taste


1 teaspoon vegetable oil





take garllic cloves and coat with veg. oil sprinkle with a little bit of salt. wrap in aluminum foil and put in a 350 degree oven for about 10-15 minutes





in a seperate bowl mix the mayo and sour cream together with the lemon juice until well combined. add in the thyme, oregano, and green onions. You can add salt and pepper here as needed to taste and mix well. Take the garlic out of the oven and cut it up as finely as possible. Using the back of a large knife or cleaver continually press down on the garlic until it is almost a paste. put this into the bowl with the mayo/sour cream mixture and cover with plastic wrap. Refrigerate for at least 1 hour.





Boil the potatoes until BARELY fork tender and then immediately drain and rinse with cold water until not longer hot. Put into a large bowl and sprinkle with salt and pepper. Add the mayo/sour cream mixture and shredded cheese. Mix together until well coated. Cover and refigerate until cold and ready to use.Does anyone have a good recipe for potato salad?

SKILLET POTATO SALAD


Also known as:


GERMAN POTATO SALAD





6 medium potatoes


8 bacon slices


陆 cup chopped onion


1 can Condensed Cream of Celery Soup


1/3 cup milk


2 tblsp. sweet pickle relish


2 tblsp. vinegar


陆 teas. salt


1 or 2 hard boiled eggs





Cook potatoes in jackets until tender, peel, dice, and keep warm. (Can also use canned potatoes.)


Fry bacon until crisp. Remove from skillet, drain and crumble.


Pour off all but about 4 tblsp bacon fat, add onion and cook just until tender.


Blend in soup, milk, relish, vinegar, and salt. Cook until mixture comes to a boil.


Gently stir in warm diced potatoes and all but 1 tblsp. bacon.


Heat thoroughly.





Pour in serving bowl. Sprinkle remaining bacon over top %26amp; garnish with parsley and wedges of hard boiled egg. Can be served hot or cold.
What I may like in a potato salad recipe may not be to your liking. I prefer mustard potato salad. I have eaten many different types of potato salads and have found most to be very good.

DIRECTIONS


Place the potatoes in a saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer for 12-14 minutes or until tender. Drain; cool for 30 minutes.


Slice eggs in half (discard yolks or save for another use). Cut the whites into 1/2-in. pieces.


In a large bowl, combine the mayonnaise, vinegar, sugar, mustard, salt and pepper. Add the potatoes, egg whites, onion, celery, green onions, red pepper and parsley; toss to coat. Cover and refrigerate for 2 hours or until chilled.

Nutritional Analysis: One serving (3/4 cup) equals 110 calories, 1 g fat (trace saturated fat), 2 mg cholesterol, 305 mg sodium, 22 g carbohydrate, 3 g fiber, 4 g protein. Diabetic Exchanges: 1 starch, 1 vegetable.
EASY POTATO SALAD,


you will need, potatoes, onion, fresh parsley, mayo, milk, salt, pepper.


Boil potatoes and chill in fridge.


chop (or use food processor ) onion, parsley, mix 1 cup mayo to 1/3 cup milk, salt %26amp; pepper, then mix together easy.
I think it is good, I obviously cook the potatoes and let them cool, then I take celery chopped and green or red peppers and put some garlic spice or onion spice and I also add black pepper and parsley on the finished with the good ole red paprika, and about two to three table spoons of salde dressing NOT MAYO, doesn't do a great job! sometimes i put a little sour cream - couple tbsps


and black olives. mix all together

That's it. Serve warm or cold.
