I usually quarter them, toss with olive oil, salt, and rosemary, and roast. Maybe 35 mins at 350. Gotta keep an eye on them because the rosemary will be very bitter if it burns.Red potatoes??? simple recipes??
HERB-ROASTED NEW POTATOES
Yield: 6 Servings
1 lb 14 oz small red potatoes,
.unpeeled (or russets)
1/4 c Chopped fresh basil or 1 tsp
.dried basil
1 tb Chopped fresh oregano or 1
.tsp dried
1 tb Olive oil
1/2 ts Salt
1/4 ts Black pepper
2 1/4 oz Grated parmesan cheese
1. Preheat oven to 425F. Cut the potatoes into 6-8 wedges each.
2. In a large bowl, combine the basil, oregano,oil,salt and pepper.
Add the potatoes and toss to combine.
3. Place the potatoes on a nonstick baking sheet and sprinkle with
parmesan cheese.
4. Bake for 20-25 minutes of until tender and golden brown.
VARIATION: Instead of red potatoes, use small Yukon Gold or Finnish
Yellow potatoes, both of which have yellow flesh. Substitute 2 t.
chopped dried rosemary for the basil and oregano.
Serving size: 1 cup. Per serving: 1/2 F, 1/2 Protein, 1 bread.

1 (3-pound) bag new potatoes, quartered
1 pound fresh green beans, cut into bite-sized pieces
1/3 cup olive oil
2 1/2 tablespoons white wine vinegar
1 tablespoon Dijon mustard
1/4 teaspoon dried dill
1/2 teaspoon salt
1/2 teaspoon ground black pepper
In a large saucepan, add potatoes to enough water to cover. Bring to a boil, and boil for 8 minutes. Add green beans, return to a boil and cook for 2 minutes. Drain and cool slightly.
Place potatoes and green beans in a serving bowl.
In a small bowl, whisk together olive oil and next 5 ingredients. Pour over potato and green beans, tossing gently to coat. Cover and chill.

Roasted Potato and Green Bean Salad
- 2 pounds small red potatoes, washed and cut into 3/4 inch cubes
- 1/4 cup plus 3 tablespoons extra virgin olive oil
- 3/4 pound green beans, ends trimmed, cut to 1 1/2 inches
- 1/3 cup fresh mint, chopped (I omit the mint)
- 1 1/2 tablespoons fresh lemon juice
- 1/4 pound feta cheese, crumbled
- salt and fresh ground pepper to taste
Preheat oven to 450 F.
Place potatoes on a baking sheet:; drizzle with 1 tablespoon of olive oil and sprinkle with salt and pepper. Bake for 20-30 minutes, stirring occasionally, or until tender.
Place potatoes in a large serving bowl. Over high heat and while potatoes are roasting, bring a pot of salted water to a boil. Add green beans and cook until crisp-tender, approximately 7 minutes. Drain. Add green beans to potatoes in bowl and add mint. Toss.
In a small bowl, whisk the olive oil and lemon juice. Add to the potato mixture and toss. Season with salt and pepper. Crumble the feta on top and serve with mint sprig for garnish, if desired

2 pounds red potatoes, quartered
1/4 cup butter, melted
2 teaspoons minced garlic
1 teaspoon salt
1 lemon, juiced
1 tablespoon grated Parmesan cheese

Preheat oven to 350 degrees F (175 degrees C).
Place potatoes in an 8x8 inch baking dish.
In a small bowl combine melted butter, garlic, salt and lemon juice; pour over potatoes and stir to coat. Sprinkle Parmesan cheese over potatoes.
Bake, covered, in preheated oven for 30 minutes. Uncover and bake an additional 10 minutes, or until golden brown.

Potato Cooking Basics
Oven Baked Potatoes
Preheat oven to 350 degrees. Scrub potatoes and pierce to allow steam to escape. Bake on oven rack or cookie sheet for 60-75 minutes. (To test for doneness, squeeze with an oven mitt. Potatoes should give easily.)
Favorite toppings are sour cream or butter. Healthy alternatives include salsa, broccoli and low fat cheese, or chili.
Variation: Half Baked potatoes
Cut potatoes in half lengthwise. Sprinkle parmesan cheese on the cut surface and place cut side down on greased or sprayed baking sheet. Bake at 350 degrees for 30 minutes.
Mashed Potatoes
Scrub one 5-1/3 oz. potato for each person. Bring a medium pot of salted water to a boil. Add the potatoes and cook until tender, about 20 minutes. (Test for doneness by piercing with a fork). Drain water and return pot to warm stovetop for a few seconds, shaking pot to remove remaining moisture.
We recommend not peeling potatoes, but if you wish you can easily slip of the skins at this point with a knife. Place potatoes in a large bowl and mash. Popular additions are butter, milk and pepper. Alternative seasonings include minced garlic, sour cream, or buttermilk.
Microwave Mashed Potatoes (a video demonstration of this quick technique can be viewed at potatounderground.com)
Scrub four potatoes, 5-1/3 oz. potatoes, place into a microwave safe dish and cover with lid or plastic wrap. Do not peel or poke potatoes, and be sure to vent the container. Some microwave containers have venting lids on the cover, or you can cover with plastic wrap and leave slightly open on one side.
Microwave for 8 minutes or until potatoes are done. Use oven mitts to remove dish from microwave, as steam will have built up. Also use mitt to remove top from cooking container. Mash right in the container, adding milk, butter, salt and pepper as desired.
Oven Roasted potatoes
Allow one 5-1/3 oz. potato per person. Heat oven to 450 degrees. Scrub potatoes and cut into wedges wider than traditional fries (or one inch cubes if you prefer). Coat a baking sheet with cooking spray. Place potatos on cooking sheet and drizzle with one to two tablespoons of olive oil and toss to coat. Sprinkle with salt and pepper. Roast for 30 minutes. Turn and roast for an additional 15 鈥?30 minutes, until potatoes are crunchy on the outside.
Alternative seasonings include chili powder or parmesan cheese
I cut them into large bite size pieces, put them in a glass pyrex dish with a cover. Melt butter and drizzle, sprinkle with salt and pepper. Add chopped rosemary (or if you just have dried rosemary use that). Bake at 400 until done. It's yummy!
I love roasting them in the oven with butter salt, pepper and a bit of rosemary or dill..
Wash 'em, boil 'em, smash 'em and add a honkin knob of butter and some cream. Serve with bangers and peas. Yum!
