baked red skin potatoes. I make these all the time
(1)Cut the potatoes into fourths, boil them until soft.
(2) Drain and place in a pan, casserole dish, anything of the sort
(3) Drizlle with olive oil and cut a few pieces of butter
(4) If you have ms. Dash or Lipton Savory herb and garlic mix(i use this). Any type of herb mix, pour over the potatoes, and mix and stick in oven for 30 minutes

Man-Lovin' Potatoes --
.INGREDIENTS
8 red potatoes
1 cup mayonnaise
1/2 cup sour cream
1 tablespoon onion powder
1 tablespoon garlic powder
1 teaspoon seasoned salt
1 teaspoon ground black pepper
3/4 cup crumbled cooked bacon
1/2 cup diced red onion
2 cups shredded American cheese
3 tablespoons grated Parmesan cheese

1.Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
2.Slice potatoes with skins on into 1/4 inch thick slices. Place the potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, 10 to 15 minutes. Drain and allow to steam dry for a minute or two.
3.Mix together the mayonnaise, sour cream, onion and garlic powders, seasoned salt, pepper, bacon, onion, and American cheese in a bowl. Stir in the potato slices. Pour mixture into prepared baking dish. Sprinkle top with grated Parmesan cheese.
4.Bake until bubbly and beginning to brown, 35 to 40 minutes.

Honey Roasted Red Potatoes --
.INGREDIENTS
1 pound red potatoes, quartered
2 tablespoons diced onion
2 tablespoons butter, melted
1 tablespoon honey
1 teaspoon dry mustard
1 pinch salt
1 pinch ground black pepper

1.Preheat oven to 375 degrees F (190 degrees C). Lightly coat an 11x7 inch baking dish with nonstick cooking spray.
2.Place potatoes in a single layer in prepared dish, and top with onion. In a small bowl, combine melted butter, honey, mustard, salt and pepper; drizzle over potatoes and onion.
3.Bake in the preheated 375 degrees F (190 degrees C) oven for 35 minutes or until tender, stirring halfway through the cooking time.

Red Skinned Potato Salad --
.INGREDIENTS
2 pounds clean, scrubbed new red potatoes
6 eggs
1 pound bacon
1 onion, finely chopped
1 stalk celery, finely chopped
2 cups mayonnaise
salt and pepper to taste
..DIRECTIONS
1.Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and set in the refrigerator to cool.
2.Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
3.Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
4.Chop the cooled potatoes, leaving skin on. Add to a large bowl, along with the eggs, bacon, onion and celery. Add mayonnaise, salt and pepper to taste. Chill for an hour before serving.

Oven Roasted Red Potatoes --
.INGREDIENTS
1 (1 ounce) envelope dry onion soup mix
2 pounds red potatoes, halved
1/3 cup olive oil

1.Preheat oven to 450 degrees F (230 degrees C).
2.In a large plastic bag, combine the soup mix, red potatoes and olive oil. Close bag, and shake until potatoes are fully covered.
3.Pour potatoes into a medium baking dish; bake 40 minutes in the preheated oven, stirring occasionally.
Dauphinois Potatoes
Thinly slice and arrange in a pan and layer with gruyere cheese and softened onions. Pour over a mixture of half cream and half stock of your choice and bake in the oven until potatoes all soft ad browned on top. Delish!!!!
